Back to School Recipe Series: Part 1!
So I don’t have kiddos (yet), but I know plenty of people who do and I hear about the battles they experience every day with wanting to feed them wholesome foods but not having the time to do so! I cannot imagine the workload moms and dads are experiencing these days, between being a mom, teacher, tutor, lunch lady, etc- the days of juggling many responsibilities have just begun! Don’t fret! Good Soul Nutrition has developed this recipe series to help!
Allergies? No Problem!
Dairy: Swap milk for non-dairy milk. Swap Greek yogurt for non-dairy yogurt.
– Nut: Swap peanut butter for sunflower seed butter.
– Gluten: Swap whole wheat flour for oat flour and almond flour (as stated in recipe).
This series is all about featuring delicious recipes that are easy, simple, delicious, packed with nutrients, and versatile! Not only that, but I also wanted to highlight and feature real families that have tried and approved these before posting for you all to try 🙂
Grab your waffle iron, toppings of choice, and be ready for a delicious meal.
Serves: 4 large waffles or 12 mini waffles
Ingredients:
- 2 eggs, beaten
- 1 3/4 c milk of choice (fortified with Vitamin D)
- 1/2 c peanut butter
- 1/2 c jelly or fruit preserves of choice
- 6 oz. plain greek yogurt
- 1 3/4 c whole wheat flour (or 1 cup oat flour and 3/4 cup almond flour for gluten free)
- 1/4 c ground flaxseed
- 1 Tbsp honey
- 1 tsp baking powder
Directions:
- Combine all ingredients well in a large bowl. Tip: mix ingredients together besides jelly. Swirl in jelly to batter gently to create beautiful jelly swirls!
- Cook on a lightly greased waffle iron until light and crispy (these waffles make take longer to cook than traditional waffles.
- TIP: Freeze the leftover waffles and pop in the toaster for a quick, protein and fiber packed breakfast or snack. Top with fresh fruit, nuts, or more nut butter!
